100% Organic Verdejo from cool, high altitude 700-800m-vines harvested by night at optimum ripeness in mid-September, from nutrient poor, limestone rich soils. Using wild native yeasts of the grapes, fermentation in lightly-toasted, select, fine grain 300lt French Allier barrels for 2 months and a further 6 months in small stainless steel tanks in constant contact with the fine lees and regular batonnage prior to being racked, softly filtered and bottled. Bright golden yellow, intense complex nose of ripe exotic fruit, minerals and a touch of wood. An unctuous, elegant palate with great natural acidity, balance and persistent finish. Match with richly flavoured fish, meat dishes.
