High-altitude 750-850m Organic 70% Monastrell and 30% Syrah from dry-farmed 30-35 year old bush and trellised vines, organic farming, nutrient-poor, limestone-rich soil, scarce rainfall. Aged 3-4 months in American and French Allier fine grain, medium toasted 300l oak barrels. Deep in colour, well-integrated fine juicy tannins, persistent, soft on the palate with a silky fruit-forward finish. Enjoy with grilled, roasted, bbq meats, rice, pasta dishes, cured meats, semi-cured cheeses.
