Syrah, 25-30 years, trellised vines, night-harvested from mid-September at 700-800m altitude, nutrient-poor and limestone-rich soils, scarce rainfall, using organic and sustainable farming. Maceration 21 days up to 29°C to obtain good colour and then reduced to 23°C to preserve primary fruit aromas. Aged 6 months in 300lt American fine grain, medium-toast oak. Intense, deep red colour with purple tinges. Ripe red cherry, plum, blackberry aromas with red fruits, spices, black pepper on mid palate, elegant, smooth with a subtle hint of toastiness.
