The cellar’s crowning glory and the flagship of the winery. A selection of yoke must, the finest and most elegant from the Estate. Made with 100% Verdejo grapes from 83 year-old bush vines (20%) with yields of less than 1 ton per acre and vines on trellises over 25 years of age (80%) with yields of 2.98 tons per acre. Cold maceration of 30% of the grapes, static racking and fermentation for 20 days in small stainless steel tanks at 15°C, resting on natural yeast lees, clarified, stabilized at -4° C. and filtered. Pale, straw-colour with a steely reflection, clean and bright. Striking bouquet of citrus and anise where white fruits and flowers stand out. The palate is fresh but with volume, fruits of citrus, lemons, pears, fleshy, ripe white fruit flavours and fennel and minerality. Dense, long step, with a sweet and pleasant ending that invites you to continue drinking. An elegant wine, very fruity and great freshness. Available in 37.5cl, 75cl and Magnums.
