The cellar’s crowning glory and the flagship of the winery. A selection of yoke must, the finest and most elegant from the Estate. Made with 100% Verdejo grapes from 83 year-old bush vines (20%) with yields of less than 1 ton per acre and vines on trellises over 25 years of age (80%) with yields of 2.98 tons per acre. Cold maceration of 30% of the grapes, static racking and fermentation for 20 days in small stainless steel tanks at 15°C, resting on natural yeast lees, clarified, stabilized at -4° C. and filtered. Pale, straw-colour with a steely reflection, clean and bright. Striking bouquet of citrus, green apple and passion fruit. Round and zesty mouthfeel with citrus, pears, fleshy, ripe white fruit, green herb, fennel and minerality. Smooth and elegant on the palate with enough acidity to carry the flavours through to the finish. Available in 37.5cl, 75cl and Magnums.
