30 days maceration-fermentation at 28 degrees C; malolactic fermentation 10 days at 20 deg C after alcoholic fermentation

Ageing: 24 months in barrel, 48 months in bottle
Barrels: 80% American, 20% French oak barrels; 12 months in new oak, 12 in 3-5 year old oak
Racking: Many - five between tanks, four between barrels
