Soil type: Poor, shallow, infertile calcareous-clay soils with free drainage
Age of vines: Average 27 years
Varieties: 75% Tempranillo, 10% Mazuelo, 5% Garnacha, 10% Others
Elaboration: Classic with destemming
Fermentation: In 22,500 litres stainless steel tanks, 11-13 days at 29-30 degrees C
Macerations: Daily remontage and pumping followed by long maceration of 12 days

Ageing: Once decanted, and the malolactic fermentation concluded, the ageing period began in January 2007, lasting 23 months
Barrels: 30% new American oak barrels, 20% new French oak barrels, 10% new Russian oak barrels (made by Seguin Moreau and Murua)
Racking: The first 2 rackings every 5 months, then every 6 months
