Fermentation: In 10,000 Kg stainless steel tanks, 11 days at 30 degrees C
Macerations: Daily remontage and pumping. 14 days skin contact after fermentation

Ageing: Once decanted, and the malolactic fermentation concluded, the ageing period began on 12th January 2002
Barrels: 267 new Russian oak barrels (made by Seguin Moreau)
Racking: The first 2 rackings every 4 months, then every 6 months
Total ageing: 23 months
