As part of the Castillo Perelada group, a family-owned business
based in Empurdán, the production of cava was extended
to Vilafranca del Penedès following the purchase in 1979 of
the cava producer Olivella Ferrari, a winery traditionally
considered to be a model in terms of quality. Modernised
and enlarged in 1990, Castillo Perelada has an annual capacity
of about three and a half million bottles. The three white
grape varieties of the DO Penedès region are used,
predominantly Macabeo
and Xarel-lo,
together with Parellada.
The Castell d'Olèrdola and Olivella Ferrari ranges includes a Brut Reserva and a Brut
Rosado. Today, Cava is second only to Champagne in world sales of sparkling wines. Cava's name derives from the Spanish for 'underground cellar', which became the term for the production method. We are
the sole UK agents for the Castell d'Olèrdola and Olivella Ferrari cavas.
