Viura 80% with Sauvignon Blanc 10% and White Grenache 10% from average 85-year-old vines from small plots on chalky-clay terraces at 550m altitude on the foothills of Sierra Cantabria villages: San Vicente de la Sonsierra (Rioja Alta) and Labastida (Rioja Alavesa). Harvested exclusively by hand with an exhaustive selection of grapes in the vineyard and again on the table at the winery. Basket-pressed, pre-fermentation cold maceration with Viura fermented in new French oak barriques for 16 days with twice-daily stirring of lees (battonage), and Sauvignon Blanc in a 700l concrete egg and White Grenache in inox. After fermentation, aged 5 months in new, fine-grain oak casks from northern France with a three-monthly racking.
Lemon yellow colour with a silvered rim. Primary aromas of pear, apple and grapefruit with hints of white flowers and sweet spices. Fresh attack, savoury notes, well-balanced fruit and wood assemblage, broadening out on the palate and leaving a lingering refreshing taste of toasty ripe fruit notes and citrus hints. A gastroinomic white. Limited production: 9,800 bottles
