Hand-harvested, old vine Albariño (60%) with Godello (40%) from calcareous slate soils. Jose’s father was the first to bring Albariño to the area 40 years ago. Alcoholic and malolactic fermentation take place in the same new French Acacia barrels which impart elegance and finesse and help enhance the unique characteristics of these varieties, followed by battonage over lees for six months. Natural clarification without cold stabilization leaving the wine to stand over time.
