Hand-harvested, selected 90% Mencia and 10% autochtonous varieties from calcareous slate, granite, schist soils. Fermentation in French foudres from Radoux Maitre tonnelier with stems, followed by malolactic fermentation and ageing in finely toasted French, American and Central European oak barrels with battonage over lees for 6 months. A natural filtration occurs through decanting without any clarification or the use of chemical or mechanical elements.
Opaque, deep cherry garnet with purple tinges. Complex, intense nose, compact mature red, black fruits, coffee, tobacco, with mountain herbs, mineral and shaved graphite notes. Like the nose, the palate is complex, initially fresh and youthful but then more elegant, complex and unctuous with delicate flavours of violets, black cherries, liquorice, toastiness, cassis, mature tannins. Long persistent and elegant finish. Limited production: 19,600 bottles. Recommend opening 1 hour prior to consumption. 14% abv
