Sauvignon from average 37 year old vines from their 3
hectare La Victoria Estate, harvested 12th October 2001 in
15 kg boxes. After fermentation in stainless steel vats of
3,000 kg at 31deg.C for 12 days, remontage and pumping occurred
daily for another 20 days with grapeskins. Once racking and
malolactic fermentation were completed, ageing began in January
2001 in 40 new Russian and French oak Haute Futaie (Seguin
Moreau), racked twice every 5 months, and then every 6 months.
Bottled 8th January 2004 without clarification or filtration
and released May 2005. Deep, intense black cherry colour with
violet rim. Very complex spicy, blackberry nose with hints
of leather and toasted cigar box. Structured, gamey, earthy
notes combine with compact berry fruit, strong backbone and
elegant tannins make this wine ready for drinking now but
also with great potential for improvement in bottle. Cork
- Natural Extraflow. 14% Vol. Total production 12,000 bottles
of 75cl.
