Sauvignon from average 30 year old vines from their 50
hectare Pradolagar Estate. Poor, shallow, infertile calcareous clay soils and free drainage promote moderate vegetative vigour. Harvested manually end September/October
in trailers of 2,500 kilos. After fermentation in 22,500kg
stainless steel vats at 29/30 deg.C for 11/13 days, remontage
occurred daily for another 11 days with the grapeskins. Once
racking and malolactic fermentation were completed, ageing
began in January in 30% new American oak, 20% new French
oak, 10% new Russian oak and 40% American/French/Russian oak
(1 wine) barrels made by Seguin Moreau & Murua, for 23
months, racked twice every 5 months, and then every 6 months.
Bottled January 2010 without clarification or filtration.
Richly coloured, deep, black cherry colour with violet rim. Powerful,
complex aromas of red berries, wild strawberries and raspberries with undertones of sweet liquorice. Glorious structure, full-bodied and luscious,
rich and powerful, concentrated and well-balanced, silky
tannins that add gamey, earthy notes to the ripe crushed berries.
Ready for drinking now but has great potential for improvement. Time enhances its structure and aromas. Cork-Natural
Extraflow. 14% Vol. Total production 208,813 bottles of 75cl
and 5,000 bottles of 150 cl.
