Sauvignon from average 42 year old vines from their 7
hectare El Consul, 3 hectare La Misela and 7 hectare Terrazas
Estates, manually harvested October 2005 in 15 kg boxes. After
fermentation in stainless steel vats of 10,000 kg at 30deg.C
for 11 days, remontage and pumping occurred daily for another
14 days. Once racking and malolactic fermentation were completed,
ageing began January 2006 in 160 brand new Russian oak barrels
(Seguin Moreau), racked twice every 4 months, and then every
6 months. Bottled January 2008 without clarification or filtration
and released June 2009.
Deep, intense black cherry colour with violet rim. Pronounced,
complex nose with hints of leather and tobacco. Full and rich,
concentrated ripe blackberry, gamey, leathery flavours, superb
structure with very elegant, well-integrated tannins of oak
and fruit. Ready for drinking but has great potential for
improvement in bottle. Time enhances its structure and aromas.
Cork - Natural Extraflow. 14% Vol. Total production 45,000
bottles of 75cl and 1,500 bottles of 150cl.
