Highly selected, hand-picked in small crates of 20kg 100% Tempranillo from vineyards over 80 years old of clay and lime soils. Separate fermentation was carried out in 500 litre French oak casks. Fermentation and subsequent maceration took two weeks. After malolactic fermentation, the wine is aged 18 months in new French oak casks and then bottled without stabilization or filtration.
Deep cherry colour with garnet rim, ripe black fruit with wild herbs and sweet mocha notes on the nose. Tastes toasty and roasted with black fruit and liquorice flavours. Rolls along well on the finish, showing lemon zest and clove notes. An elegant wine that is best decanted and left to stand for an hour before serving. Good with meat and mushroom stews. It has great potential for keeping in good conservation conditions. Production: 4000 bottles.
