| 100% 35 year-old Garnatxa with average yields of 2kg per vine. Unoaked, this is the youngest of the family - the fruit and floral notes of the Garnatxa dominate. Manually harvested in 14kg boxes with selection by hand in the winery. They are de-stemmed, lightly pressed amd gravity fed to the fermentation tanks. Fermentation and maceration on the lees continues for 8 days, 'flush-over' and 'delestage' are made daily in order to extract the sweet tannins for flavour and colour. This is followed by malolactic fermentation to increase mouth thicknes and stabilize the wine. Crimson, mineral, rose petal, Asian spices and black cherry aromas. Racy, ripe, rich, complex wild berry fruit and forward on the palate with a smooth, long, intense finish.
