cava is made according to Jewish rabbinical law. The word
‘kosher’ is a derivation of the Hebrew kasher,
meaning ‘proper’ or ‘pure’. Kosher
cava production must follow precise standards of purity under
the direction of a rabbi. A rabbi controlled the production
of these Castell d’Olerdola cavas.
